Braising is the simplest way to elicit oohs and ahhs from friends and family that are coming to gather around your dinner table. All you need is a good dutch oven, or cast iron skillet, and about a little more than an hour to produce this mouthwatering meal that will fill your home with the most tempting and enticing home cooking smells (our neighbors even stopped by to see what we were making)!

The recipe being both sweet and savory, we couldn’t decide whether to use an IPA or a Porter, so we added both! We used Ballast Point’s Black Eye, a blend of their Black Marlin, a hoppy English porter, and their Big Eye IPA. This beer is available only in their tasting rooms on draft, but you can pick up bottles of their year-round Black Marlin and Big Eye IPA, or choose a different beer of your choice! An IPA will make the dish a little lighter and savory, while a Porter will add some sweetness and depth.

This recipe is so simple, it only takes about 15-20 minutes to prepare and then you have time to enjoy a few beers while it’s just simmering away on the stove. After about an hour, the meat is fork-tender and you’ll have a thick, rich, glistening sauce that you’ll want to slather on just about everything!

Beer Braised Pork Chops with Apples and Onions

Sweet and savory combine in this harvest pork chop recipe made with beer!

Materials

  • 1 tablespoon olive oil
  • 4 large pork chops about 1 inch thick
  • 1 medium yellow onion sliced
  • 2 apples cored and sliced into 8 wedges (Granny Smith, Fuji, or other firm variety)
  • 2 cloves garlic minced
  • 2 tablespoons flour
  • ½ cup beer we used an IPA/Porter blend
  • 1 cup chicken broth
  • 1 teaspoon cinnamon
  • 1 teaspoon fresh grated ginger or 1/2 teaspoon ground ginger
  • 1 tablespoon thyme fresh or dried
  • salt and pepper to taste

Instructions

  • Add oil to skillet or Dutch oven. Brown the pork chops on both sides, remove from pan.
  • In the same pan, sauté the onions until translucent, add garlic and apples. Sprinkle flour and incorporate into any pan drippings. Deglaze pan with beer.
  • Add the rest of the ingredients, cover and cook over medium heat for 1 hour or until very tender.

Notes

If using a slow-cooker: after searing the pork, combine all ingredients in a slow cooker on low for 4-6 hours
