While researching for this IPA Pickles recipe, I’ve learned that Galaxies start out as cosmic pickles before shaping into what we know galaxies look like today. This is why we decided to create our very own galaxy inside a mason jar, we called it Space Dust IPA Pickles.
For this, we decided to use one of our favorite IPA, Firestone Walker’s Hopnosis.
Hopnosis brings certain quality that are hard to find in a lot of IPAs out there. It is hop-forward and full of tropical flavors, needed to give a nice sweet tropical undertone to the pickle brine.

Space Dust IPA Pickles
Ingredients
- 2 regular sized cucumbers
- 1 lg mason jar
- 1 tbsp quality sea salt
- 1 tbsp sugar white, brown, etc.
- 1 tbsp dried dill
- 1 tbsp pickling spice
- 3 cloves garlic
- 1 serrano pepper for spice optional
- ¾ cups white cider vinegar
- 1¼ cups Firestone Walker Hopnosis beer or favorite hoppy beer
Instructions
- Whether you are making spears or chips, get them cut in advance and in abowl. We're making chips, so we compared the cucumbers to the size of the jar and cut and pack accordingly.
In Spice Jar
- Pour the pickling spice, dill, and garlic into the jar. Pack the Cucumbers Into the Jar Tightly.
Prepare the Brine
- In a small pot, combine the vinegar and beer and bring to a boil. When a rolling boil is reached, lower to a simmer and pour in the sea salt and sugar. Stir to combine. Turn off heat and carefully pour the brine mixture into the jar leaving approximately an inch of space from the top of the jar.
- Seal the Jar. Place lid and ring on jar and make sure itis on tightly. If you will be storing the pickles for any length of time, place the finished jar in a large pot of boiling water for about a minute to fully seal the lid. If not, tightly close the lid and put em in the fridge overnight. They will be ready to eat in the morning but will best after a week. Enjoy!
