Tomorrow is Jester King’s final beer release of 2017. They’ll be debuting 2017 SPON — Muscat, a 100% spontaneous beer refermented with Muscat grapes grown in northeast Texas!
The base for 2017 SPON — Muscat is a blend of four puncheon barrels from their 2016 coolship season (about 422 gallons or 1,600 liters worth of beer) blended on August 15, 2017. The base blend was then refermented with about 1,000 pounds (454 kg) of Muscat grapes for a fruit to beer ratio of about 2.4 pounds per gallon (0.3 kg / liter). After about two months of refermentation and maturation, the beer was packaged on October 12, 2017. About 1,100 liters were packaged and about 500 liters were sent for further aging as part of a special project. 2017 SPON — Muscat is 6.2% alcohol by volume, 25 IBU, 3.5 pH, and 1.001 specific gravity (0.25 Plato).
2017 SPON — Muscat will be released when the Jester King tasting room opens at 4pm on Friday, December 29th. It will be available by the glass and in bottles to go (375ml/$25). They have about 2,400 bottles available with a bottle limit of three per customer per day. Aside from special events, 2017 SPON — Muscat will only be available at the Jester King tasting room.
