Stone Brewing Co.’s latest Stochasticity Project exploration is equal parts beer science and beer history. A blend of barrel-aged and fresh ales, this fascinating experiment will manifest itself via 22oz bottles and draft starting Monday, May 18.

Stochasticity Project HiFi+LoFi Mixtape is their interpretation of an old British staple. Long ago, before stereophonic sound was even a thing, pub owners had a system for transforming questionable ale into something quite drinkable. They kept “stock ales,” beers left to mature in vats or oak barrels. Once deemed suitably mellowed and refined, these aged ales were blended with their freshly brewed counterparts, which were often overly smoky and harsh. The result: more well-rounded, complex and delicious libations.

For this re-enactment of sorts, Stone Brewing Co. wasn’t compelled by such circumstances. They took an already good beer and made it great, blending a stock ale aged three months in oak foudres with a fresh version of the beer. Mixed together, these fresh and vintage “tracks” make beautiful music punctuated by toffee, dark fruit character, toasted malts, and light berry and sherry notes.
