Bottles of OLIVIA are now on sale at the Monkish Brewing tasting room. This is the first beer they made in their French oak vats (foudre). It’s a foudre-fermented, 100% brettanomyces (all wild yeast) fermented, blonde ale that is aged for 9 months in the foudre. Bottles have been conditioned for an additional 6 months. Fruity, earthy, oaky, white winey. Monkish Brewing’s first foudre beer, OLIVIA, is named after founders Henry and Adriana Nguyen’s first child.
