Packing a British hop punch, Innis & Gunn’s Toasted Oak IPA (5.6%, 330ml) is an understated triple-hop-infused brew matured for 41 days over oak, giving it a rich, rounded quality much like an authentic IPA of the 1800s. The new addition to the Scottish brewer’s core range took Silver at the recent World Beer Championships, scoring a highly recommended 88 points.
Known for its innovation in oak maturation, the multi-award-winning independent Edinburgh brewer Innis & Gunn has infused three charges of British hop varieties: Styrian Goldings and Goldings, to build layer upon layer of zesty aroma and flavor and extract all the delicate floral nuances. Two batches are added during the main brewing process with the third introduced post fermentation. Toasted Oak IPA is then finished over specially toasted American oak heartwood chips, in signature Innis & Gunn style, as founder and CEO Dougal Sharp explains.
“The process we have used gives the beer a lovely subtlety and depth. Infusing the hops is a much gentler way of extracting the flavor and maturing over oak lends the rich vanilla tones that our beers are known for. This creates a great balance of flavor between the natural sweetness from the oak and bitterness from the hops.”
Pale gold in color, Toasted Oak IPA gives off aromas of freshly mown grass, clean grapefruit and pine trees. On the palate, the rich vanilla flavor from the oak comes through, married with zestiness and a light bitterness from the hops. At 5.6% ABV, this is a full-bodied but still crisp and refreshing IPA.

ABOUT INNIS & GUNN
Innis & Gunn was discovered by accident and lucky for us that it was. The beer was conceived in 2002 – well not the beer that Innis & Gunn drinkers know and love, but the base beer. Dougal Sharp was asked by Grant’s Distillers to create a distinctive beer that would season whisky barrels for a Cask Ale Reserve whisky. he beer was developed and served its time in the barrel only to be thrown away as a by-product until canny distillery workers realised that it was a brew like no other and far too good to dispense with. Instead, they dispensed the beer into lemonade bottles for the occasional clandestine treat.
