Every holiday season, Dock Street Brewing puts together a special pre-Thankgsiving celebration and unveil a rare concoction from their cellars. This year Dock Street Brewing have a few offerings: Barrel Aged Bubbly Wit, first ever Holiday Pack, new beer engine for cask conditioned beers and a few sips of a special potion: Vicio Mezcal.

This batch of Bubbly Wit was aged in French oak wine barrels for a year while mingling with brettaonomyces, sacchronomyces and thier subtly sour Trappist IPA from 2012. This slightly tart Bubbly Wit carries an earthy, subdued funk with hints of honey, pears and citrus. Naturally carbonated with champagne yeast in 750ml bottles.

And Dock Street Brewing have selected their best brews for this season for a limited release Holiday Pack, which includes a few exceptional recipes from their new Head Brewer Vince DesRosiers and the infamous Dock Street Walker.

Oatmeal Stout – ABV 6.5% This stout is full bodied and sweet with flavors of caramel and roasted malts. The addition of oats impart a silky smooth mouthfeel.

Brown Bomber Ale – ABV 5.5% Medium bodied with chocolate, toffee and berry notes.

Walker – ABV 7.2% The beer heard ’round the world. The Pale Stout is brewed with malted wheat, oats and flaked barley for a smooth and creamy mouthfeel. Fuggle hops provide delicate, earthy notes while the cranberries create a bloody hue and a slight tartness. The addition of house roasted goat brains give intriguing, subtle notes of smoke.

No Exit – ABV 8.5%. This double IPA has an intense, dry, fruity, earthy, danky and citrusy flavor with a crisp, dry finish. It’s like getting smacked in the mouth with hops.

Dock Street Brewing is happy to share a tasting of Vicio Mezcal, brought to you by Dock Street Spirits, an offshoot of Dock Street Brewery. And on the beer engine: Dock Street Brewing may have a Brown Ale conditioned with maple syrup or maybe, if you are lucky, a delicious and naturally carbonated Oatmeal Stout.
