On June 28th, 2014, the Beer Aliens landed at Council Brewing in San Diego, CA for their grand opening celebrations. After checking in to the sold out event, each guest would be given a souvenir glass and a wristband that allowed them to receive one sample of four special grand opening beers plus a full pour of a beer from the regular menu.
We spoke with husband/wife owners Curtis and Liz Chism before the celebrations began about their brewing experience, licensing and the mad rush to prepare for the grand opening. Liz is the brewmaster and honed her skills homebrewing with Curtis. Council Brewing had a soft opening a few weeks ago offering a small assortment of brews to whet everyone’s appetites. Preparing for the grand opening, they increased their tap list to 16 offerings to ensure that there was something for everyone. Knowing how complicated the licensing process can be if you don’t do your homework, we asked Curtis and Liz how long it took to get everything licensed. Curtis explained that they had done their homework and had all their licenses and were open within 7 months.
Walking in and looking at the menu board, we were pleasantly surprised when we saw the four special brews. First was the Tart Saison (with Kumquats), then the Belgian Tripel (Chardonnay Oaked). Next we sampled their Pirate’s Breakfast (with cold steeped Ethiopian coffee and vanilla) and finished the special brews with their Pirate’s Breakfast (bourbon oaked). Pirate’s Breakfast is a regular brew available at Council Brewing. These two variants were for the grand opening.
Opting to continue sampling the regular menu, we skipped our full pours and started trying tasters off the regular menu. Dubbel Conspiracy (Belgian dubbel), Clodhopper (ESB), Royal Blood (imperial red ale) and Council Brown Ale were all very tasty and highlight the skill and passion that the Council brewers put into their craft. Looking around the tasting room, we saw many happy faces and heard lots of compliments on their beers. Council Brewing has arrived and they are here to make their own mark on the San Diego brewery scene.
